Tony's Mash

I was visiting my friend Tony about a month ago and he fixed me an awesome lunch with sautéed squash, potatoes, and onions.  I have not been able to get this meal out of my head so I decided to try to cook his mash but wanted to add some protein, which I choose to be chicken.



First I sautéed some onions in canola oil.  I decided to use canola because it reaches a higher cooking temp.






Then I added the chopped up vegetables and the chicken.










Then I sauted the vegetables and chicken for about 15 minutes on a medium high heat.








The finished product was fantastic.  I added some spinach to give me more color in my meal and it was such a great addition.  Thanks Tony for the idea.

Banana Pecan Pancakes

This morning I picked up my Angel Food box and inside was a packet of pancake mix which I decided to use. I do not make pancakes often because I like salty food for breakfast more than sweet but this recipe was a combination of both.

Banana Pecan Pancakes

1 cup of pancake mix
1 cup water
1 frozen banana, skin cut off, slice and then microwaved for 1 minute
1/4 c crushed pecans

First mix the pancake mix and water together and then add the banana and pecans.  Mix again.  Then cook as usual.

I will say these were delicious.  They did not need butter or syrup in my opinion.  Hope you will try them.

Yogurt is the Word of the Day

I could not see myself eating eggs again this morning, don't get me wrong, I love eggs but I wanted something different.  So I decided to make a yogurt parfait.  Boy, did I make the right choice.  I used frozen strawberries, lemon yogurt, and fiber one cereal.  Definitely hit the spot.

I started Weight Watchers again recently and this is 3 points.

Yogurt has been around for more than 5000 years. It is actually a fermentation process of milk.  You need to look for yogurt that has active cultures because this helps with digestive health.  It is rich in protein, calcium, Vitamin B, and many other good things.

I bought a yogurt maker and use it frequently to make my own.  I love the consistency of thicker yogurt, for example greek yogurt.

Also, if you take yogurt and put in a coffee filter or cheesecloth, you will get yogurt cheese.  Yogurt cheese can be used for many things, dip, whipped cream, frosting, mousse, etc.  If you try it you will love it.  I will talk more about this later.
