Spinach Feta Eggs

It has been forever since I have done a post and I am sorry about this but my creative juices were not flowing when it came to cooking lately.  So lets fix this.

Recently I have been cooking on Sundays for the week and it is crazy cooking all at one time but it is wonderful during the week when you can just pull something out of the refrigerator to eat.  It also helps you eat more healthy.

So here is a recipe for Spinach Feta Eggs.   The great thing about eggs is that you can add any vegetable into the mix and come out with a delicious meal.

First get out your ingredients:



















3 eggs
1 cup of egg whites
( or use a total of 10 eggs if you do not want to use the whites)
2/3 cup of feta cheese
1/2 pound of spinach
1 TBS of olive oil
1/3 cup of milk, cream, half & half (which every you would like. I used soy milk this time)
1 tbs kosher salt
1/2 tbs pepper














Next you are going to mix your eggs & eggs whites, milk, feta cheese, salt & pepper in a bowl.
















Then you want to wilt your spinach.  So in a pan put 1 TBS of olive oil.  Heat this up and then start adding your spinach.














As your spinach heats it will start reducing in size. This is called wilting.















After it has drastically reduced in size.  Take it out of the pan and drain some of the oil.  Let cool somewhat so that it does not curdle the eggs when you add the spinach.














Then add the spinach to your egg mixture.  Then scramble your eggs.
















Then scramble your eggs.  I lightly scrambled because I was cooking for the week.  This way when I reheat they will not be overcooked and hard.

Serve with some turkey bacon or center cut bacon and you have a wonderful meal and healthy to boot.
