Pass the Potatoes, No I Meant Potato Soup

For a long period of time I thought corn and potatoes were the only vegetables out there.  Well let me rephrase and say these were the only vegetables I would eat.  Now days I do not really consider them vegetables.

Tonight I was craving potato soup.  If you have never made any soup, this is an easy one.  Below is the recipe and you will be so glad that you fixed it!  It is delicious!

3 medium sized potatoes, peeled and chopped into small pieces.  Put the potatoes in a medium size pan and cover with cold water then add 2 chicken bouillon cubes.  These cook for about 20 minutes or until the potatoes are soft.  Then pour off most of the water but leave a little and then add some butter. I use one tablespoon or 2.  Then add some milk.  I have used soy, rice, regular milk and they all work great.  Add salt, pepper, and chives.  Then reheat a little bit and mix all the ingredients to your liking, mashing the potatoes to your preference.  You can make this thick, which I like or make it more runny.  Your preference. Add some bacon bits and cheese and voila!  Yum, yum!

  2. So easy to make vegan and I know would be just as good. I have made it with soy milk and rice cheese before and it was good.

  3. Ya know.....I can't seem to give up cheese. I have cut back on it a lot, but cheese is a fairly big staple in my diet! Brent, on the other hand, barely even eats the soy/rice cheese stuff. I think the issue for him was the realization that it's not cheese (i.e. "I'm gonna put "chreeze" on this soup" vs. "I'm gonna put a substitute for cheese on this soup")....I want the real thing!!!
